This is our triple distilled single malt. It was aged for two years in a twenty litre Australian sherry barrel. There are only 46 500ml bottles. Its alcohol strength is 45.3%.
We asked Bill Lark to taste our very first barrel of whisky. He very kindly wrote us some tasting notes:
Rich clean malt with subtle toffee and sweet caramel notes adding to malt in a beautiful combo. Hints of spice and wood trying to speak up as well. Good nose and sense of ale.
A sweet and creamy whisky leading the palate to chewy Columbine toffee and luscious oily malt delivering a rich and intense mouth feel. Kind of wants to make you lick your tongue. It settles beautifully into the finish long before you realise - long soft, clean, warm.
